
Hot Chocolate Mousse
A stovetop dark chocolate custard, whipped hot in a siphon for a warm, airy chocolate mousse.

Ingredients
| 5 oz | 140 g | Dark chocolate, chopped |
| 2 cups | 480 ml | Whole milk |
| 1/2 tbsp | 7.5 ml | Cornstarch |
| 4 tbsp | 60 ml | Sugar |
| 1 pinch | Salt | |
| 1 pinch | Cinnamon | |
| 1/2 tsp | 2.5 ml | Vanilla extract |
| 1 tbsp | 15 ml | Rum or sherry (optional) |
Instructions
- Place the chocolate, sugar, salt, cinnamon and half the milk in a saucepan over low heat and cook, stirring, until the chocolate has melted.
- Dissolve the cornstarch in the remaining milk and whisk it into the hot chocolate mixture. Cook on low heat, whisking constantly, until the mixture thickens, about 5 minutes.
- Remove from heat, add the vanilla extract and rum if using, and whisk until smooth.
- Pour the hot chocolate into a whipper, place the top on, and charge with 2 N2O chargers. Shake vigorously.
- Keep in a bain-marie if not using right away. Layer or top the hot chocolate mousse as desired.
