A firm raspberry jelly cut into rounds, delicious alongside red fruit desserts or with citrus and ricotta.

Ingredients

300 graspberry coulis
30 gvegetal (plant-based gelling agent)
30 gsugar
10 gfraise des bois (wild strawberry)

Instructions

  1. Bring the raspberry coulis to the boil together with the vegetal, sugar, and fraise des bois.
  2. Spray a container with pan release agent.
  3. Pour the mixture into the container and let it set until firm.
  4. Cut shapes from the set jelly using round cutters of different sizes.

Serving suggestions: Delicious with red fruit desserts, such as chilled red fruit soup; as a base ingredient in a pre-dessert with pear, tangerine, or citrus fruit; also pairs well with yuzu, rice, and ricotta cheese.
