Thin strawberry-flavored agar gel strands extruded through silicone hoses to resemble spaghetti, for elegant dessert plating.

Ingredients
| 250 g | strawberry coulis |
| 100 g | water |
| 50 g | sugar |
| 7 g | agar agar |
Instructions
- Combine the liquids with the sugar and bring to the boil with the agar agar.
- Strain and skim the surface with a spoon.
- Fill a hypodermic needle with the liquid and inject into silicone hoses.
- Immediately place in an ice water bath and let fully gel.
- Extrude the spaghetti from the hoses using a siphon with a special adapter.
Serving suggestions: Line the walls of a deep plate with the spaghetti, with atsina cress, freeze-dried yoghurt, and strawberry; finish table-side with a red fruit consommé and a quenelle of yoghurt or lemon verbena sorbet. Also works in compositions with citrus, vanilla, and chocolate, or with red fruit, avocado, and fennel.
