A vivid green basil gel set with gelatin rather than agar, to preserve the chlorophyll's color through the heating process.

Ingredients
| 250 g | water |
| 50 g | basil |
| 40 g | sugar |
| 4 g | gelatin leaves |
Instructions
- Blanch the basil leaves, then quickly cool them in iced water.
- Finely grind in a food processor with the water and sugar, then strain the mixture.
- Heat some of the liquid to dissolve the soaked gelatin.
- Mix it with the remaining basil water and strain.
- Refrigerate until chilled.
- Use a food processor or blender to mix the jelly into a gel.
Serving suggestions: As part of a pre-dessert with an aloe vera and basil semifreddo; or as part of a dessert with grapes, citrus fruits, white chocolate, or red fruits.
