Okonomiyaki

Okonomiyaki is a Japanese pancake that is eaten as a snack. The name is derived from the words okonomi and yaki, which can be loosely translated as 'grilled as you like'. It consists of a batter with toppings of choice and is grilled on a teppan. You can serve the okonomiyaki as is, but for this component we cut them into circles to use as a side dish or snack. Recipe for approx. 500 grams of batter.

Ingredients

250 gdashi
1egg, lightly beaten
1 tsp5 mlyeast
250 gflour
1cabbage, any variety
toppings, as desired

Instructions

  1. Stir together the dashi and the egg in a bowl.
  2. In another bowl, sieve together the flour and the yeast and stir in the dashi mixture.
  3. Cut the cabbage into strips and fold these into the batter.
  4. Heat a frying pan with peanut oil.
  5. Spoon a layer of batter of about 2 cm thick into the pan and bake about five minutes on each side until crispy and cooked through.

Serving suggestions:

  • As a snack or lunch dish.
  • Serve with tonkatsu sauce and Japanese mayonnaise.
  • As a base for a vegetable dish.
