
Raspberry 'poffertjes'
'Poffertjes' (mini pancakes) are to Dutch gastronomy what windmills are to the country's landscape. They are a great basic idea to embroider on and low-threshold, because there is no need to explain what a pancake is. Apart from that, poffertjes have a texture that goes exceptionally well with fresh fruit, sauces and various types of ice cream. Makes 375 grams.

Ingredients
| 165 g | flour | |
| 10 g | ground freeze-dried raspberries | |
| 150 g | milk | |
| 50 g | raspberry coulis | |
| 8 g | icing sugar | |
| 2 g | salt | |
| 1 tbsp | 15 ml | clarified butter |
Instructions
Preparation method:
- Put all the ingredients together. Stir well and taste.
- Add salt and icing sugar to taste.
- Pour the mixture into a squeeze bottle or dispenser.
- Fry the poffertjes in a special poffertjes pan (a frying pan with semi-spherical indentations).
Serving suggestions:
- Serve as a sweet snack.
- As a dessert in a children's menu.
- As a component in a dessert, e.g. with raspberry butter and crème fraîche ice cream.
